The Reflet du Terroir is a blend of 70% Tannat with 15% each Cabernet Sauvignon and Cabernet Franc. All grapes are hand-harvested and destemmed before being fermented in stainless steel tanks. The wine is fermented on the skins for 20 days during which the tanks are drained twice and returned on top of the cap. After fermentation the wine stays in tank for three months before being transferred to 1 and 2 year old barrels where it matures for 12 months. The resultant wine is dark and full flavored with lots of power and elegant tannins. Pair with hearty roasted meats.
