Domaine Moutard-Diligent, better known for their fantastic Champagnes, also has 60-acres in the northern outpost of Burgundy just ten miles north-east of Chablis. Francois Moutard crafts his 2015 with fruit from 20 to 60-year-old vines and with minimal fining, filtration, and sulfur. Flush with raspberry, cherry, and strawberry on the nose and throughout the palate. It has a dry, minerally finish with a bright acidity that keeps the wine lively. Pair with roasted fowl, charcuterie, and cheeses.
