80% Mourvèdre, 10% Grenache, 10% Cinsault
The grapes are hand-selected in the vineyard and in the cellar; de-stemmed, crushed and put into concrete vats for 3 or 4 weeks fermentation thanks to indigenous yeasts.  Aged In large oak vats for 18 months before being bottled.  Intensely aromatic and brooding, featuring notes of black plum, wild blackberry, ripe black cherries, truffles, violet, wild thyme, smoked meat, and crushed stone. The palate is Weighty and tightly wound, showing layers of dark fruit, iron-rich minerality, mesquite ash, and garrigue (wild Provençal herbs).  14.5% ABV
