100% Tempranillo Bianco

Minimum Vine age of around 40 years.  Grapes are destemmed and gently pressed, then fermented using native yeasts in concrete tanks.  Aged for approximately 11 months in stainless steel/concrete tanks (completely unoaked).  Limited small-batch production (around 6,000 bottles).  Aromas of Fresh pear, green apple, white peach, chamomile, lemon zest, and subtle wet stone.  The palate is light to medium-bodied with a seamless, polished, and mildly creamy texture balanced by crisp, tingly acidity, with flavors of White strawberry, citrus, melon, and fresh thyme, backed by a clean, mineral-driven finish with a hint of almond oil.  12.5% ABV
