Hand-harvested into small, shallow crates that are transferred into stainless steel tanks under carbon dioxide. Intracellular fermentation starts off slowly and lasts about 8 days. Mainly carbonic fermentation, native yeasts, and 2 grams/hl of sulphite. Malolactic fermentation in stainless steel tank, and aging in vat before bottling in spring.
