Oxidative aging in an American oak solera system (typically 3 to 4 criaderas and 1 solera) for an average of 10–12 years.  Grapes are extra-ripe and sun-dried on esparto grass or straw mats to concentrate sugars before pressing and natural fermentation.  Fortified with 96% neutral grape spirit.  Deep, opaque dark mahogany.  Intense notes of raisins, dried figs, prunes, dates, dark chocolate, roasted coffee, nougat, and baking spices. Rich, smooth, velvety, and unashamedly sweet with layers of toffee, dark caramel, molasses, and black walnut, balanced by a thread of lively acidity. 17% ABV
