Off of a minimum of 4o year old vines. All grapes are harvested by hand and no fining. After pressing, cold settling before fermentation begins and fermentation is is all natural. Vinified in foudre. The nose is restrained, saline-driven, and aromatic. The palate is Light-bodied but textured, showcasing tart lemon, yellow plum, white pepper, and herbaceous notes like arugula or dill. High, crisp acidity with a "steely" or "nervy" feel. 12.5% ABV
